Sheldon: The Bursa Clocks Out and the Music Starts

By half past seven the diamond towers along Aba Hillel Silver have gone dark floor by floor, and the last lit windows on the block belong to Sheldon. Inside, a bartender cracks ice for something that smells of arak and grapefruit. Out on the terrace a couple has claimed one of the swings that hang beside the tables. The room still carries the residue of lunch, a faint char off the grill and the ghost of tahini, from plates that went out at one o'clock to accountants working against a forty minute window. Then the lights drop a stop, the volume climbs, and the same space starts behaving like a bar that took a wrong turn at the Ayalon and never went back. The Ramat Gan business quarter does not usually get an evening. Sheldon hands it one, five nights a week.

Chef Lior Kadosh took over the menu after time in Tel Aviv kitchens including Seatara, Eduardo and Violet, and what he has done here is answer a scheduling problem with cooking. Lunch has to feed people billing by the hour. Evening has to stand up to a cocktail list and a DJ. The dishes barely change between the two. The pacing does.
